Little Balls of Eggplants in Red Sauce – 88

This is a modern and vegetarian revisitation of a typical meal from abruzzo called “pallottine”. They are little balls of eggplants cooked in red tomato sauce in extra virgin olive oil. A hot main course really tasty and delicious to enjoy also as starter. After its use, if there is anything left, we recommend to refrigerate it and consume within few days.
